Salted Caramel Popcorn

Salted Caramel Popcorn

20150925_180539So if you know me at all, you know I’m OBSESSED with popcorn.

Obsessed is probably not even giving my love of popcorn justice but I can’t come up with a stronger adjective right now 🙂

My favorite popcorn topping is nutritional yeast (ummm wipe that look of your face, it’s delicious). But truth be told, I’ve never met a popcorn I didn’t really like.

One day when I was working browsing through Pinterest (but seriously how can I get a job doing that?) I came across a post on caramel popcorn. I’m more of a salty and sweet type of girl so I thought why not make salted caramel popcorn?

Well point for me! Because it turned out amazing. One tip (careful of unpopped kernals! If they’re mixed in with your caramely clusters you could hurt your teeth! ( I didn’t do that or anything…)  Enjoy!!

Fresh 5 Minute Salsa

Fresh 5 Minute Salsa

20150925_181835

ohhh helllooo my fraaands.

Did anyone else have tomato overload at the end of the season? Like I ate cherry tomatoes for breakfast, lunch, and dinner for about 2 weeks straight. I loved it, but just explaining the depth of my tomato haul.

After eating so many that I get a belly ache, canning and freezing…one of my favorite things to do is make SALSA!

My hubs and I eat ungodly amounts of salsa. Seriously I put it on eggs, rice, chips (duh) and way too many other things.

This salsa recipe is one of the easiest things a person can make. Cooking skill required on a scale from 1-10…

I only say that because you need to be able to identify ingredients, other than that….easiest. thing. ever.

You need to try this out. Even if you don’t have your own tomatoes or aren’t drowning in any you need to try it.

It’s so good.

Like you know when you go to Mexican restaurants and they give you the house chips and salsa and you eat your body weight in them and then your meal comes and you can’t even look at it?

oh what? Don’t lie…you do it too.

Well this salsa is that good. So I’ll stop talking now and lets get to the good stuff!

Thai Curry Zoodle Soup

Thai Curry Zoodle Soup

Thai-Chicken-Zoodle-Soup-5You’re probably thinking, wow that’s such a gorgeous picture! You’ve gotten so good at taking crisp, clean, beautiful pictures of your recipes!

But in full disclosure I didn’t take these pics.

Nope.

I wish. I’m working on getting better at staging my food and having more white space in my pictures, but I’m not there yet.

Carolyn at All Day I Dream About Food posted this recipe and I knew I had to make my own version of her soup. But we ate it so quick I didn’t even get to snap a picture! haha. Kidding

I made this soup and made a few small tweaks. I’m sure it wasn’t bad to begin with but I seem to be incapable of following a recipe line for line without putting my own spin on things.  🙂

This is the perfect healthy and delicious soup. I LOVE thai flavors and this is a healthy, low salt, and low sugar way to get it in my mouth PRONTO. And will Fall setting in around us, you gotta try this!

Thai-Chicken-Zoodle-Soup-2

ALWAYSSUMMER (5)So easy right? I really don’t know why I didn’t think about putting zoodles in soup before…? And with just putting the hot broth over the zoodles, they cook perfectly and you don’t end up with a mushy mess.Thai-Chicken-Zoodle-SoupAs stated before. I adapted this recipe from All Day I Dream About Food. You need to go and take a look at her website! Carolyn posts some really great stuff. Like today, she has a new post on Caramelized Onion Pizza. UMMM yes please, I can get into that.

Anyway, to ease some of my guilt on  being lazy and not taking my own pictures for this post, please go take a peak at the great work she’s doing over at her blog!

Thank you all for stopping by! I hope you have a wonderful weekend and I’ll “see” you next week!

No Bake Protein Bites

 No Bake Protein Bites

Holy Cats it’s Labor Day weekend! How’d that happen?

Hard to believe summer is metaphorically over (technically it’s not over until September 23rd) #nerdstatus BUT I’m excited for fall.

You know that saying…. Something like “fail to plan, plan to fail”….? That’s how I feel about food. If I don’t plan ahead and have healthy snacks and food on hand, next think you know, I’m making bad decisions and compulsively thinking about 150 new Lays potato chip flavors(ps I totally think I should be the million dollar winner). I think I really have some great ones but that’s not the point. The POINT is that I DON’T want to eat every flavor of Lays chips and I don’t want to make bad choices.

So every week I spend time trying to cut veggies and clean fruit and make it easy to grab. But sometimes a celery stick or handful of grapes isn’t cutting it. Like I need chocolate or I need crunchy salty….. it’s like a ravenous beast hijacks my body….. the struggle is real.

ENTER these delicious and healthy snack bites. They’re healthy, they’re easy, they’re no bake, they’re easy to store, and easy to bring along anywhere.  oh and it tells your mental chocolate monster to STFU 🙂

I’ve made some of these before but honestly these are the best ones I’ve made. I combined several recipes (you’re welcome for testing all types of chocolate and sweet goodness for you. It was hard work……………….)

These are a great option for kids, for adults, for school, for lunches, for snacks, for car rides, for day trips, for watching Scandal on Netflix on the couch for hours…. oh just me? ok then.

Bottom line. These little babies are delicious and a healthy sweet treat. You literally have no reasons to not make them . Like right now.

There you have it! As noted, you might have to put a little elbow grease into mixing is all together but even if it seems a little dry in the bowl, once you roll into a ball in your hands, you’ll realize it’s actually perfect and the stick together great!! Hope you get to give these a try and that you enjoy!

HAPPY FRIDAY! Have a wonderful LONG weekend!

Summer Radish Salad

Summer Radish Salad

wpid-img_20150821_080230.jpg

Summer is almost over?! Is this a joke? This summer flew by in the blink of an eye for me.

With the wedding planning and then the wedding and then our magical trip to Italy (remind me I should do a post on that) I feel like summer just began. But Autumn/Fall is my favorite season by far so I’m ok with it 🙂

With the end of the summer season comes Labor Day. Labor day is filled with family and fun and barbecues and cookout and food and drink! This year we don’t have many plans, Jake coaches football so the Labor Day weekend won’t really include traveling or big parties for us.

Buuutttttt

If you have Labor Day plans and need an awesome side dish, I’ve solved your problem for you!

This Radish Salad is patriotic(it’s red) delicious(anything with lemon and parsley is ok in my book!) and it’s healthy, oh and one more thing, b.e.a.utiful!

ALWAYSSUMMERTada.Super duper easy peasy.

A super helpful trick is that I use THIS handy dandy tool to chop all the radishes up nicely and evenly (not to mention insanely fast) and it works like a charm.

wpid-wp-1440960244291.jpgWe will definitely be making this again soon. Thanks for stopping by and checking out the blog and I hope you had wonderful weekend!!!
