Homemade Mayo

DSC_9957 copySoooooooo full disclosure here, I have never been a fan of mayonnaise. You’re probably thinking “Um, what? Isn’t this post dedicated to mayo?”

YES. But hear me out.

I think it all started from an attempt to do a Hellmans mayo hair mask when I was around 13 years old. The smell you guys. Mayo heating up on your head, you can’t escape it. ughhhhh. So gross. Ever since then, even the whiff of mayo makes me lose my appetite immediately.

But then a little while ago I tried my aunt’s homemade lemon tarragon mayo with some bbq chicken wings (thas a whole other post to talk about how good that was) in short, it was sooo good. TOTALLY different flavor than the stuff on the store shelves. I decided I’d give making my own a try.

Not only was I surprised how easy it was to make, but also totally surprised how delicious it is! There are so many flavor combo’s you can think up. I wanted to try a spicy one.

Of course last week you caught a glimpse of it on these great tacos that we shared. DSC_9996Spicy, creamy, delicious. It’s the perfect way to get some healthy fats and tons of flavor to the tacos, or sandwiches or whatever else you put mayo on (I told you I’m new to this mayo world) 🙂
DSC_9947 copyThe possible best part of this, is that you make it right in the wide mouth jar that you store it in. NO DISHES!!!

Entire process is about 30 seconds.
ALWAYSSUMMERDSC_9939 copyTA-DA! Done. And all with ingredients you can name and recognize (unlike store-bought). I suggested a few flavor add ins but basically you could do anything you wanted!

Caramelized Pork Tacos w/ Pineapple Salsa

DSC_9996Oh Tacos. So difficult for me to try to photograph yet so delicious that I can’t help but share.

Tacos are one of my favorite things to make when you’re tight on time. They’re always a crowd pleaser and as you can see with this recipe, the flavor combos are endless. This particular recipe is a new favorite of ours.DSC_9989

 Last week we shared the recipe for the Pineapple Cucumber salsa which is totally a great salsa to make not just for tacos but for chips, a topping for fish, and eating by itself.
As you learned last week, the salsa is incredibly easy to make. These tacos, even though the process involves heat, aren’t that much harder to make. Check it out:

See?!? You can top this with spicy chili sauce or anything you want. Then serve with some tortillas chips and the remaining pineapple salsa and it’s the perfect dinner!

But serious question time. Seriously bloggers, without a freaking taco stand holder thing (technical term), how do you beautifully photograph tacos?!? I commend all of you who have managed the feat.
They’re so delicious though. Ahhh my head will be filled with taco dreams until I make these again.

Curried Vegetables with Creamy Polenta

DSC_9858pmLately I’ve been feeling a little, blah.

It’s freezing outside, it’s the middle of January, I see approximately 7 minutes of sunlight a day, and the list of BLAH-ness goes on.

I still feel a little sluggish after the holidays and my body is still craving fresh and nutrient dense foods.

My favorite recipes are the ones that aren’t “recipes” at all. You can throw in any ingredients you want and really get creative. Some of my favorite examples of things you can do this with are stir fry’s and curries, although there are many more.

This was inspired by something I saw over at Naturally Ella and threw in whatever I had on hand. It turned out beautiful and delicious! DSC_9864pmI love polenta and really think we should eat it more. Especially when it’s creamy and made with really fresh and delicious pasture butter(my personal fav). It’s so simple to make and is the perfect base for a healthy dish.

There are so many delicious ideas I’ve seen recently. For starters this one, this one, and this one. Soooo good.  DSC_9881pmIt’s also really easy to make. Take a looksies, and make this this week when it’s freezing out and you need a little warming pick me up 🙂 ALWAYSSUMMERDon’t forget you can use any veggies or ingredients your heart desires!! These little nuggets of flavor are perfect for gifts or perfect for snacks at your holiday party!20151222_183823I am sitting here writing this looking at these nuts and wishing I hadn’t given them all away as gifts!!

Since cooking, trying new recipes, and posting about it is such a big part of my life, I love to be able to share some homemade food gift with my friends and family. In the past I’ve made THESE , THESE, THIS as well as flavored salts (including Sriracha, Rosemary, Lemon, Chili Lime, Porcini Mushroom, to name a few) for gifts in the past. They’re always a big hit because I think people really appreciate the time, energy and love that goes into homemade gifts!3This year while browsing Pinterest, I kept seeing so many recipes for different flavors of nuts. I’ve tried a few in the past but for some reason I was really digging the rosemary this year. They turned out great and the sugar in this recipe really helps create a great glaze that helps the little pieces of rosemary and salt stick so each nuts is packed with flavor.

Even if you’re gifts are already given and your parties are all over, you definitely should give these a try!

ohhh helllooo my fraaands.

Did anyone else have tomato overload at the end of the season? Like I ate cherry tomatoes for breakfast, lunch, and dinner for about 2 weeks straight. I loved it, but just explaining the depth of my tomato haul.

After eating so many that I get a belly ache, canning and freezing…one of my favorite things to do is make SALSA!

My hubs and I eat ungodly amounts of salsa. Seriously I put it on eggs, rice, chips (duh) and way too many other things.

This salsa recipe is one of the easiest things a person can make. Cooking skill required on a scale from 1-10…

I only say that because you need to be able to identify ingredients, other than that….easiest. thing. ever.

You need to try this out. Even if you don’t have your own tomatoes or aren’t drowning in any you need to try it.

It’s so good.

Like you know when you go to Mexican restaurants and they give you the house chips and salsa and you eat your body weight in them and then your meal comes and you can’t even look at it?

oh what? Don’t lie…you do it too.

Well this salsa is that good. So I’ll stop talking now and lets get to the good stuff!
