Creamy Lentil Stew Blog HeaderYou might be thinking, it’s April, it’s not “stew season” it’s starting to get warm! I want to see fun fresh veggies and salads and grilled foods.

And to that I would say hold your horses. I hear ya, I reeealllly do but the fact of the matter is that I woke up to snow this morning.

So yes, while I have me eyes on some delicious spring and summer inspired dishes like this and this; please excuse me while I curl up into a ball, shed a tear, and eat this comforting and oh so delicious stew

I’m ready for spring. I really actually appreciate each season and love what each one offers but I start to get antsy in April when it’s 70° one day and snowy the next. In the words of the Backstreet Boys, quit playing games with my heart. 💔

But on the bright side, because there’s ALWAYS a bright side, the colder & cozier temps allow me to share this seriously good stew with you.

Lentil & Black Bean Salad with Spicy Lime Dressing

Ah- Who still feels full after Thanksgiving?! Oh just me? There’s just always such delicious food and I over indulge every.single.time. No shame.

But I always run into the issue the week afterwards of obviously needing to eat, but not hungry, or nothing sounds good, or only the stuffing and mashed potatoes sound good but I ate them all… ugh, the struggles. I need something lighter.

Enter delicious veggies:

Lentil & Black Bean Salad with Spicy Lime Dressing

Ingredients
1 cup dry lentils (green or brown or both!)
2 cups cooked black beans or 1 15oz can, rinsed and drained
1 bell pepper of your choice, chopped
1/2 small red onion, diced
3  roma tomatoes, chopped
½ cup cilantro, stems removed and chopped

-Dressing-
Juice of 1 lime
2 Tbsp. olive oil
1 tsp. dijon mustard
1 clove garlic, minced (or 1 tsp garlic powder)
1 tsp. cumin
1/2 tsp. oregano
1/4 tsp. chipotle powder
1/4 tsp. cayenne pepper
1/8 tsp. salt

Directions
Put lentils into a small sauce pan with plenty of water to cover, bring to a boil then lower the heat to simmer, cover, and cook until lentils are tender; which is about 30-40 minutes, but check your package for specific instructions! Drain lentils and let cool slightly

While lentils are cooking, make the dressing: place all ingredients in a small bowl or cup* and whisk to combine. Set aside.

Combine the bell pepper, onion, tomatoes, beans, and lentils in a large glass* bowl. Add the dressing and toss to combine. Add cilantro, and lightly toss once more.
You can serve it immediately or chill covered in the fridge to let the flavors combine and enjoy later!

This was really really really tasty and would be something awesome to make to bring for lunches at work throughout the week! It was just what I needed, light and refreshing.

*I suggest using a glass bowl because the dressing contains lime juice. The acidity in lime juice often reacts with metal in metals bowls and can give your food a metallic taste- yuk!

This was perfect. Light and delicious. I preferred it chilled a little bit but it was great room temp too!

Lemon Baked Tilapia with Spinach & Carrot Lentils

Lentil Recipe

Ingredients

  • 1 quart water
  • 1/2 cup lentils
  • 1 carrot, finely chopped (1/2 cup)
  • 1/2 onion, finely chopped (1/2 cup)
  • 2 cloves garlic, minced
  • 1 dried bay leaf
  • Coarse salt and freshly ground pepper
  • 1 tablespoon olive oil
  • 8 ounces spinach, stems removed, leaves washed well

Directions

  1. In a large saucepan, combine the water, lentils, carrot, onion, garlic, and bay leaf. Season with salt and pepper. Bring to a boil. Lower the heat and simmer, partially covered, until the lentils are soft, 15 to 20 minutes. Drain, discarding bay leaf.
  2. Use a paper towel to wipe out any water from the saucepan. Add oil, and return pan to medium heat. Stir in the lentils, vegetables, and spinach. Cook, stirring occasionally, until the spinach is wilted, about 2 minutes. Serve 🙂

* Later in the week I made this recipe again but added ground turkey and just had it for lunch a couple days at work- it was equally amazing! Seriously so delicious!!!

Tilapia Recipe

Ingredients

  • 2 tilapia filets (*or really you could adapt this to however many you want to make as ingredient measurements aren’t exact)
  • Lemons (I used 1 lemon- the juice of 1 half and then sliced the other half)
  • Salt and Pepper

Directions

  1. Preheat oven to 350 degrees
  2. Line a glass baking dish with foil and grease with non-stick spray or olive oil 
  3. Put the fish in the dish
  4. Pour lemon juice over the fish filets
  5. Season the fish with salt and pepper(you can also really use any spices you choose)
  6. Place the slices of lemon over the fish
  7. Cover the dish with foil and bake in the oven for 20-30 minutes.

There you go! Seriously so easy, and healthy and most importantly delicious!! Hopefully you guys enjoy as much as we did.
